A Favorite Recipe

To continue my blog celebration, today I am sharing one of my prized recipes! The recipe comes from The Southern Living Cookbook, one of my favs! I have been making this Crab Quiche for many, many years and it is WELL loved! It is requested by family and friends. I have even made several at Christmas time and given them away as gifts! ENJOY!

Crab Quiche (recipe slightly adapted from The Southern Living Cookbook)
2 Deep Dish frozen pie crusts
2 eggs, beaten
1 cup mayonnaise
4 TBSP flour
1 cup milk
16 ounces fresh crabmeat
2-4 cups shredded Gruyere cheese
1 tsp onion powder
1 tsp season salt OR Old Bay seasoning
Prick bottom and sides of pie crusts with a fork. Bake at 400 for 3 minutes then gently prick crusts again and bake 5 more minutes.
Combine eggs, mayo, flour and milk, mix thoroughly. Gently stir in crabmeat, cheese and spices. Divide the mixture between the 2 crusts. Bake at 350 for 30 minutes until set. Knife inserted in middle should come out clean. Remove from oven and let sit 10 minutes. ENJOY!
