Arugula Salad OR Romaine Salad

Wegmans recently had a gluten free store event. They had an author come and sign his book and there were gluten free samples all throughout the store. This salad was one of them. It was so good I had to share it with you! It is light and refreshing. I am not a fan of Arugula but I gave it a try and I will tell you, this dressing makes the salad! I still don’t love arugula but with this dressing it is tolerable. I received arugula in our first CSA pickup yesterday and tried the salad again. I also made it with Baby Romaine and it was just as delicious as Wegmans. So if you are not a fan of Arugula, still give this a try!! Just replace it with your favorite lettuce!

Arugula Salad

1 pkg. (5 oz) Wegmans Organic Triple Washed Baby Arugula (or 2 heads of Baby Romaine from Wegmans)

Juice of 1/2 lemon (1-1 1/2 TBSP)

1 TBSP Italian Classics Tuscan White Wine Vinegar (I used salad vinegar)

1/4 cup olive oil

salt and pepper

Parmigiano-Reggiano cheese, shaved

Rinse and pat the arugula dry.

Add lemon juice and vinegar to bowl. Whisk while drizzling in olive oil. Season with salt and pepper.

Add arugula and toss. Season to taste with salt and pepper. Garnish with shaved cheese.

If serving for a party, use a clear glass salad bowl and put thin lemon slices around the bottom then add in your salad, very pretty!
