Avocado Shrimp Salad

Today I am sharing a simple go to recipe. The weather has been pretty warm lately and I enjoy having light, cool recipes that are quick to make and look good too! I created this recipe with things I like, feel free to substitute your favorites and change it up per your tastes! This would make a great meal for a lunch gathering, maybe add some fruit!! ENJOY!

8 peel and eat shrimp, peeled and cut in half

1 avocado, chopped, save the shells for serving

1 Roma tomato, chopped

a light dressing (I use my oil and vinegar dressing)

juice of half a lime

2 lime slices for garnish

I have added shaved Parmesan too but not always

Mix all the ingredients together and serve in the avocado halves. I only add a splash of the dressing, add per your taste. Place the lime halves on top.
