Wishing you a stress free day full of deep breaths!

Today I am sharing a few of my favorite foods that I eat all the time! I found a similar recipe on the eat yourself skinny blog and changed it to my tastes adding a few of my favorite foods. I love avocado and eat a half of one each day, it is so healthy and tasty! This is another cold salad that is super simple and great to have on hand especially for lunch on the back porch!

Avocado Zoodles (adapted from Eat Yourself Skinny)

Makes 1 to 2 servings, the recipe could easily be doubled!

1 small zucchini, spiralized

1/4 cup shredded carrot

1 scallion, chopped fine

Mix together in a pretty bowl, then add the following dressing and stir to combine.

Blend 1/2 avocado with 1 tsp lime juice, onion powder, salt, pepper and green goddess seasoning. Blend until smooth then drizzle in a splash of olive oil and blend until all combined. Serve cold. Mmmmmmm
