Baked Vegetable Spaghetti

I am always creating new recipes for vegetables! I eat veggies each day and add protein to each meal. It has helped me tremendously on my journey towards getting healthier! If you have your ingredients prepared ahead of time, this recipe is super simple to throw together on those busy nights! ENJOY!

Baked Vegetable Spaghetti

1/2 cup finely chopped sweet onions

1 small Spaghetti Squash, cooked and shredded with a fork

1 zucchini spiralized (if you don’t own a spiralizer, just chop your zucchini)

2 carrots, peeled and shredded

1/2 can petite diced tomatoes

1 cup cooked ground chicken

1 tsp oregano

pepper, onion powder, garlic powder

Saute all ingredients in a tsp of olive oil in a saute pan. Spray a small casserole dish with cooking spray. Layer the vegetable mixture with 1/4 cup shredded Colby Jack cheese. Bake at 350 for 20 minutes. Leftovers make a delicious lunch the next day! ENJOY!
