Today’s recipe is one I make frequently when we have guests over. It is delicious, quick and easy with no fussing about to cook it. It is a great recipe for the end of a busy day of holiday gatherings. No muss, no fuss! It does make lot of juice and it will pop, sputter and spew in your oven, the more you pat it dry the less it does this. You can always place foil on the rack underneath to help keep your oven clean. Serve it with a veggie, rice and a salad. Enjoy!

Balsamic Chicken
Bone in Skin on Chicken breast (for 3 of us, I only bake 2)
Black pepper, salt, oregano and onion powder
Balsamic Vinegar
A splash of olive oil
Wash your chicken and pat dry. I place mine on a big baking stone then sprinkle each with the spices to your taste. Pour balsamic vinegar over the chicken to coat it then splash with very little olive oil.
Bake at 375 for an hour or until done. Sometimes the chicken pieces are so large they need to bake for over an hour. Once the chicken comes out of the oven, loosely cover it with foil for about 10 minutes, this will help lock in a bit more moisture.
