Banana Nut Muffins

I spent my weekend mostly hanging out with myself, my daughter was in and out. I truly enjoyed the peace in the quiet. I made sure I did things that needed to be done but also made a point to do things I enjoy doing. I ran a few errands and popped by a local store for a few flowers. Spent time just walking through the beauty of the plants and flowers! I spent time planting more flowers and made a potted herb garden. I find it very relaxing to be outside with nature! I spent time on my porch reading and did quite a bit of cooking and baking. I hope you were able to relax and enjoy the long weekend! Wishing you a week filled with enjoyable moments!

Today’s recipe is fairly new. I found it online but when I went to make it, decided to make it healthier for my family’s needs. Give it a try, very delicious! ENJOY!

Banana Nut Muffins (adapted from Gina’s Weight Watcher Recipes)

1 ½ cups oat flour

1 ½ tsp baking soda

1 tsp baking powder

Pinch of salt

2 bananas, mashed

¼ cup applesauce

3 TBSP butter, softened

½ cup brown sugar

2 egg whites

1 tsp vanilla

½ cup bag chopped walnuts

Preheat the oven to 350. Place muffin papers in a 12 cup muffin pan. Combine the dry ingredients and set aside. Cream the butter and the brown sugar then add the bananas, egg whites, vanilla and most of the walnuts, save some for sprinkling on top.

Bake for 15 to 20 minutes until golden brown and a toothpick inserted in middle comes out clean. ENJOY!
