Beef Vegetable Skillet

My daughter as well as many of her friends have moved into dorms and are living the campus life! The elementary, middle and high schools started today. In honor of the busy season starting I thought I would share one of my go to quick, delicious meals! This is one I created, I do change the vegetables around. Be creative and use what your family likes! ENJOY!

Beef Vegetable Skillet
½ pound ground beef
½ sweet onion
1 carrot diced fine
2 small potatoes diced fine
½ zucchini diced
1 small tomato diced
1 ½ cups chicken broth (if you like beef broth, you can substitute)
Brown the ground beef with the onion until cooked thoroughly. Add the potato and carrot and sauté for about 10 minutes. Then add half of the chicken broth and cook covered over medium heat for about 10 more minutes. Remove the lid add the zucchini, tomato and the rest of the chicken broth. Season with salt, pepper and onion powder. Serve over a bed of rice. ENJOY!
