Berry Buckle

I enjoy watching the show, The Chew. I rarely sit down and watch a show when it is on so I have several of The Chew on my DVR! This show inspires me to be more creative in my kitchen. On one of the shows they made this berry buckle, it looked amazing! I set out to make it smaller since only 2 in my family would eat it and I wanted to make it gluten-free. It would be delicious served warm for breakfast! Here is my slightly adapted version of the recipe. I hope you enjoy it!

Berry Buckle

2 TBSP melted butter

1/2 cup sugar

1 egg white

1 tsp vanilla

1/3 cup milk

1 cup oat flour (you can use regular white flour)

1 tsp. baking powder

1 cup mixed berries tossed with a tsp of lemon juice

Mix the butter and sugar. Add in the egg white, vanilla and milk, stir to combine. Mix in the flour and baking powder and stir until mixed. Pour into a 6 inch square baking dish that has been lined with sprayed parchment paper.  Top with berries. Bake in a 350 degree oven for 30 minutes. ENJOY!
