Today’s recipe is a good one to make on the weekend and have throughout the week! If we are truly getting the “EPIC” snow storm they are calling for, this would be a good go to! It is a warm and comforting pork dish and will make your home feel cozy as it cooks for a while! ENJOY!

Boneless Pork Roast

Place your pork roast in a baking pan lined with foil. I used a 2 1/2 pound boneless pork roast. Mix 1 to 2 TBSP olive oil with 1 tsp or more of roasted garlic (I used garlic in a jar), garlic powder, onion powder and black pepper. Rub the entire pork with this mixture, covering the top and bottom. Roast the pork in a pre heated 425 degree oven for 20 minutes. Turn the temp down to 325 degrees and roast until done, mine took 1 1/2 hours. The internal temperature should read between 155 and 165. Allow your pork roast to sit for 15 minutes, covered with foil. I sliced mine in half. Shredded half of the pork and added a store bought BBQ sauce. The other half was used as slices. ENJOY!
