Breakfast Burritos

Today I am sharing a quick easy recipe I just made as a dinner meal. I am cooking with my 21 year old each week to try and help him learn to cook a few of his restaurant favorites! It is a lot of fun and I love spending time with him! We made a few meals (more like meal kits) and this was one of them, breakfast burritos! You keep the cooked eggs, tortillas and cheese separate, then when ready to serve, heat and eat! ENJOY!

Breakfast Burritos (be creative and add more vegetables per your taste)

makes 6 to 8 burritos

6 to 8 flour tortillas

11 eggs beaten with a splash of milk

1/2 onion chopped

2 bell peppers chopped

2 TBSP butter

shredded cheese

Melt butter in a fry pan. Add onions and peppers and cook for about 5 minutes until soft. Add the egg/milk mixture and stir to make scrambled eggs over medium heat. I placed the cooled egg/veggie mixture into a container. For serving heat a tortilla, then sprinkle with cheese. Heat the eggs and put on top, fold into a burrito! Enjoy!
