Brown Sugar Chicken

I am an early riser! Some of my best ideas come to me in the very early morning hours! I keep paper and a pen right beside my bed to jot down my thoughts! I know many people who do the same! Today’s recipe is one of those early morning ideas!

Chicken, it is what my family enjoys eating for protein. I am always trying to think of new and different ways to prepare and serve it! One morning I thought of brown sugar on chicken. I am not a huge fan of sweet mixed with savory but this works and is delicious! It is pretty quick as well.  I use bone in, skin on chicken thighs for this, it adds to the flavor and the bonus is, it is economical. ENJOY!

Brown Sugar Chicken

4 bone in, skin on chicken thighs

1 to 2 TBSP olive oil (my go to oil, if you prefer another kind or butter feel free to use, the olive oil does burn easier than the others but I like the flavor)

salt, pepper, oregano

1/3 onion, chopped fine

1 garlic clove, crushed

2 TBSP light brown sugar

Preheat the oven to 400 degrees. Season the chicken with salt, pepper and oregano on both sides. Place the oil in a saute pan, once hot, add the chicken and brown on both sides. Transfer to a baking dish. Add the onions, garlic and brown sugar to the hot pan, you can add a little more oil if need be but you don’t need much. Cook over medium to low heat for about 2 minutes. Place on top of each chicken piece. Bake 20 minutes or until done. ENJOY!
