Carrot Cake Cookies

Good Tuesday Morning! I wish you a beautiful week!
Today is a fairly new recipe. I spent some time changing this Martha Stewart recipe to a sweet I could enjoy. The spices in the cookie give it a good flavor! I hope you will try it! I am showing you a serving or packing idea that is super simple too! You simply fold a 4 inch doily in half and serve or package your cookies in it, 2 cookies fit in the doily. Fun and festive! Carrot Cake Cookies (adapted from a Martha Stewart Living recipe)

1 stick unsalted butter melted

1/3 cup brown sugar

1/3 cup white sugar

1 egg yolk

1 cup oat flour

½ tsp baking powder

½ tsp cinnamon

½ tsp ginger

¼ tsp nutmeg

Pinch of salt

¾ cup quick oats

¾ cup finely grated carrots

Mix the butter and the sugars. Add in the egg yolk, then the flour, baking powder, salt and spices. Last mix in the oats and carrots. Scoop into dough balls and place on a parchment lined baking pan. Place in the freezer for 10 minutes. Remove from the freezer and place immediately in the oven. Bake at 350 degrees for 15 to 18 minutes. ENJOY!
