Carrot Rice Pilaf

I shared The Roving Radish with you on Monday. This recipe is the one I made with the rice from the Roving Radish chicken meal kit from last week. I serve a lot of rice in my home and this is a quick, tasty, different way to serve rice! Super easy too! Give it a try! ENJOY!

Carrot Rice Pilaf (adapted recipe from an old magazine cut out, probably from Taste of Home)

1 cup shredded carrots

chopped onions, I use about a third of an onion

1 TBSP olive oil

1 cup uncooked long grain rice

1 1/2 cups chicken stock

1 tsp garlic herb seasoning

Saute the carrots and onions in the olive oil in a medium saucepan, until tender. Stir in the rice. Stir in the chicken stock and seasoning. Bring to a boil, reduce heat, cover and simmer for 20 minutes. or until rice is tender. ENJOY! (notice the yummy turkey in the 2nd picture, this recipe will make an appearance next Monday!
