Today’s post is about one of my favorite vegetables! CARROTS! It is a quick post however, one I had to share! Last week I found rainbow carrots at Trader Joe’s. They have to be the freshest tasting carrots I’ve ever had. My favorite way to prepare them is roasting. Peel and slice in big chunks, dry thoroughly, season with your favorite spices, drizzle with a little olive oil and roast at 375 degrees for 20 to 40 minutes. YUM! I also use roasted carrots in my purees with sweet potatoes, butternut squash and butter potatoes. They are also delicious in mashed potatoes. For mashed, boil a few carrots with your potatoes, making sure they are soft before you mash, then mash as you do with the potatoes and voila, orange potatoes! So good! ENJOY!
