Happy Day to you! Today I am sharing a recipe that you can toss together quickly! Lately I have been cooking earlier in the day then re-heating at dinner time. You can do the same a day or so ahead and then have a heat and eat meal!
Chicken and Peppers
1 chicken breast sliced into chunks
1 red or yellow pepper cut into pieces roughly the same size and the chicken pieces
1 smaller pepper chopped
1/2 onion, cut the same size as above
olive oil
balsamic vinegar
chicken broth (1/2 to 1 cup)
salt and pepper
Saute your chicken in olive oil until almost done, about 8 to 10 minutes total. Remove chicken from the pan and set aside. Add another small splash of olive oil. Saute your peppers and onions for about 5 minutes then add your chicken back in. Add the chicken broth and 1 to 2 TBSP balsamic vinegar. I used about 1/2 cup to 1 cup chicken broth, it will cook down. Cover and simmer 15 to 20 minutes until chicken is cooked through and the vegetables are soft. Serve over rice. ENJOY!
