Bruschetta Chicken

I created a new chicken recipe. As I’ve said in the past, we eat A LOT of chicken in our house. I feel like I occasionally get stuck making the same kind of chicken over and over. I am trying harder to continue to keep my recipes fresh and new. This recipe started out as one thing and ended up totally different then I intended. It is delicious and I think you will enjoy it, give it a try!

Chicken

1. Marinate 4 thin sliced chicken breasts (sold at Wegmans) in ½ cup olive oil, ¼ cup apple cider vinegar, salt and pepper and dried parsley in the frig. You can marinate it 30 minutes to overnight.

Then grill it until done. Mine took about 5 to 6 minutes per side on my George Forman indoor grill.

2. While the chicken is grilling, make a balsamic reduction. Combine ½ cup balsamic vinegar with 1 TBSP brown sugar in a small saucepan. Bring to a boil then reduce heat to medium high. Let it simmer for about 6 minutes until slightly thickened.

3. Combine ½ avocado chopped with 6 grape tomatoes sliced in half.

4. Make Trader Joe’s Jasmine Rice (frozen), 3 minutes in microwave

5. Plate: Place a bed of rice on your plate, chicken on top then the avocado mixture then drizzle with the balsamic reduction. ENJOY!
