Welcome 2019! I am happy to get back to blogging! I created this recipe from a busy day when I needed to serve something quick and tasty! It literally takes less than 30 minutes to make! Enjoy!
Chicken Taco Chili
5 raw chicken tenders
2 garlic cloves, minced
1/2 onion chopped
1 pack taco seasoning
1 to 2 cups Kitchen Basics Chicken Broth
can chopped green chilies
8 ounce can tomato sauce
1 can black beans
shredded cheese, sour cream and tortilla chips for topping
Season the chicken with garlic and onion powder, salt and pepper. Cook in olive oil until almost done, about 8 to 10 minutes. About 5 minutes in, I add 2 cloves minced garlic and 1/2 chopped onion. Then add 1 pack taco seasoning. Stir to combine and cook a few minutes. Add in 1/2 cup chicken stock, bring to a simmer then add the green chilies, tomato sauce and black beans. I add an additional cup of stock also. Simmer for 10 to 15 minutes. Serve with shredded cheese, crushed tortilla chips and sour cream. Serves 2
