The recipe I’m sharing with you today is written in a little book I have where I write recipes I see that I can’t save or copy. I usually write the source but this one doesn’t have a source. I adapted it to my family’s liking. Most soups are simple to take away and/or add ingredients to. ENJOY!

Chicken Tortilla Soup
1/2 onion chopped
1 cup carrots, chopped
1 chicken breast cut into cubes
3 cups Kitchen Basics chicken broth
1 to 2 cups water
8 ounce tomato sauce
1 can Rotel with green chilies
1 can cheddar cheese soup
1/2 tsp. cumin
1/2 to 1 TBSP chili powder, depends on how spicy you want it
Saute the chicken and onion in about 1 TBSP olive oil, brown. Add the carrots, saute about 5 to 10 minutes, watch the onions as they can burn quickly. I saute until the chicken is completely cooked about 15 minutes. Then add all the other ingredients. Bring to a boil and simmer for 30 to 60 minutes. Serve with tortilla chips. ENJOY!
