Good Monday Morning! We are in Christmas week! Where in the world does the time fly to?? I hope we can all take pause this week to celebrate the joys of Christmas and stand in the true meaning of this beautiful season! Wishing you a week full of love and joy!
I am so excited to share my new kitchen creation with you! It is healthy, easy to prepare, quick to make ahead and store in the frig or freezer too! This is a delicious, simple recipe that will be a great addition to your Christmas appetizers! It would also make a great addition to a busy holiday night meal. A dinner full of appetizers! You can serve these along with a few other simple appetizers; crackers, cheese and pepperoni plate with a fruit plate perhaps. The possibilities are endless to keep your food simple yet elegant and tasty! ENJOY!

Chicken Veggie Bites
1 pound ground chicken seasoned with salt, pepper, onion powder and dill weed.
Saute in olive oil the following:
1 1/2 cups fresh spinach
1/2 cup chopped onion
1 carrot peeled and shredded
2 garlic cloves, minced
Cook until the spinach wilts, about 5 to 10 minutes. LET COOL. Pulse a few times in a mini food processor. Add to the seasoned ground chicken. Mix by hand until well combined and form into small round bites. I got 20 bites. Bake at 375 degrees for 15 to 20 minutes, until the internal temp is 165 degrees on a meat thermometer.
Serving suggestions: Top with pureed avocado or guacamole. Or..top with shredded Colby jack cheese, ketchup and a pickle. Use your creativity in the toppings! Serve with a frilly toothpick which can be found near the paper plates in the grocery store! ENJOY!
