HAPPY NEW YEAR! Wishing you a year filled with blessings and peace in your heart!

I enjoyed entertaining over the holidays! I entertained each week from Thanksgiving through New Years! There is something about gathering with friends and family over the Christmas season, sharing the true meaning of Christmas, that makes my heart full!

I am not one to make New Years resolutions. I am working on a few positive things for 2016…trying to enjoy each moment by “UNPLUGGING”! I am not a fan anymore of electronics and wish we could all put down our phones, computer, turn off the tvs, etc! One other positive I am striving for is to be in the best shape I can by the time I turn that “certain age” this year! I am happy to say I am well on my way with this goal! Wishing you positives for your journey this year!

Chicken with Spinach and Tomato

2 chicken tenderloins cut into small pieces

*1 tsp grated fresh ginger

*1 clove garlic, minced

*chopped onion

2 big handfuls of spinach

petite whole mushrooms

1 Roma tomato chopped

Parmesan cheese

olive oil

Saute the chicken, onions, garlic and ginger in a small amount of olive oil, about 1 TBSP. Cook thoroughly about 5 to 8 minutes depending on the size of your chicken pieces. Then add the spinach and mushrooms and cook until the spinach wilts. Remove from the heat and add in your tomatoes and Parmesan cheese shaved over the top. ENJOY!

* during this cold/germ filled season, incorporating ginger, garlic and onions into your dishes, is a great way to stay healthy!
