Chili Corn Muffins

Welcome to July! Wishing you a Wonderful Wednesday!

I recently created a quick easy recipe using leftover chili. I simply made corn muffin batter, I use the recipe on the back of the Quaker Corn Meal container. I fill the muffin papers a little less than half full then add leftover, cold chili in the middle and cover with more batter. Bake for 15 to 20 minutes. Super Simple! You could even use a box of corn muffin mix! ENJOY!

My Chili Recipe

Ground Beef

½ white onion chopped

2 garlic cloves chopped

8 ounce can tomato sauce

¼ to 1 cup water, if you like thicker chili add 1/4 for thinner add 1 cup

15 ounce can petite diced tomatoes

Bag of chili seasoning (mild)

1 red chili pepper chopped

½ jalapeno pepper chopped

Salt, pepper, southwest seasoning to taste

Brown the beef with the onion in a saucepan. Add the rest of the ingredients and simmer for 30 minutes.
