Chocolate Chip Zucchini Bread

Today I am sharing a recipe that I have been making for a long long time! It is from a Cooking Light magazine. I have adapted it several times, this version is the healthiest! It makes a great breakfast treat! ENJOY!

Chocolate Chip Zucchini Bread (adapted from Cooking Light)

1/4 cup sugar

3 TBSP canola oil

2 eggs

1 cup applesauce

2 cups flour

1 TBSP unsweetened cocoa

1 1/4 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

pinch of salt

1 1/2 cups finely shredded zucchini

1/4 cup mini chocolate chips

Combine the sugar, oil, eggs and applesauce. Add in the dry ingredients and stir until mixed. Mix in the zucchini and chocolate chips. Pour mixture into 3 small loaf pans that have been sprayed with cooking spray. Bake at 350 degrees for 30 minutes or until toothpick inserted in the middle comes out clean. Tasty!
