Chocolate Chip Zucchini Bread

This time each year I make this delicious, fairly healthy bread! I used to subscribe to Cooking Light magazine, I believe this recipe comes from a 2004 issue and that is how long I’ve been making it! I have very slightly adapted the recipe. It is the perfect summer dessert and a wonderful breakfast treat too! ENJOY!

Chocolate Chip Zucchini Bread
3/4 cup sugar
3 TBSP vegetable oil
2 eggs
1 cup applesauce
2 cups flour
2 tablespoons cocoa
1 1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
pinch salt
1 zucchini finely shredded
1/2 cup mini chocolate chips
Heat oven to 350°.

Mix first 4 ingredients until smooth. Add the dry ingredients, mix well. Add the zucchini and chocolate chips. Spoon batter into a loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out almost clean. Cool in pan 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack. ENJOY!
