Cranberry Bread

Happy Monday to you!!

Today I am sharing one of my most favorite recipes with you! It is what recipes should be about, fond memories and touches your heart when you think of it, smell it and taste it! I have a 20 year old son and when he was in Kindergarten, his wonderful teacher had the class make this bread for a Thanksgiving feast. Beautiful memories! It is from a children’s book CRANBERRY THANKSGIVING BY WENDE AND HARRY DEVLIN. If you have small children you need to have this book! Love the book and the recipe is in the back of the book and of course adore this recipe! In my house it isn’t Thanksgiving/Holiday time without it! If you’ve never read the book or made the bread I hope you will give it a try and maybe it will become a tradition with your family too! AND even if you don’t have small children it still is a good book! I LOVE reading children’s books! ENJOY!

3/4 cup orange juice
1 1/2 cups fresh or frozen cranberries, chopped

Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice all at once; stir just until mixture is evenly moist. Fold in cranberries.

Spoon into a greased 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean. Remove from pan; cool on a wire rack.
