I love a good salad! I took bits from 3 different salad recipes to make this one very scrumptious holiday salad! It is a must for your holiday table! It makes a great lunch also! Give it a try, you will not be disappointed! ENJOY!

Cranberry Orange Spinach Salad
5 ounce container of Organic Baby Spinach, cleaned and stems removed
2 heads of Romaine lettuce, cleaned and cut into small pieces, this gives a good crunch
1/4 red onion sliced into thin rings then cut the rings in half
2 Mandarin Oranges, peeled and separated. The fresh mandarin oranges are around this time of year and they are the best!
1/2 cup crumbled feta cheese
FOR THE CRANBERRIES: combine 1/2 cup dried cranberries with 1/2 cup orange juice in a small saucepan, bring to a simmer then remove from heat and let stand 10 minutes. Drain most of the juice off leaving just a little.
Balsamic Dressing: 1/4 cup olive oil, 2 TBSP Balsamic vinegar, 2 TBSP sugar and a pinch of paprika. Place in a mason jar and shake to combine. NOTE: I double this recipe, pour half over the dressing and serve half on the side in case your guests want more.
Toss the salad ingredients together in a bowl. Drizzle the dressing over and toss to combine. ENJOY!
