Dollar Stretcher Week / Chili

As the government shutdown continues, my family has been affected like many others. This leaves many of us facing some challenges. I thought this would be a good week to share some of my dollar stretcher recipes, ideas etc. I am not an expert at saving money in the grocery store as my love of baking and cooking takes over at times! I do however do very well at stretching the food I buy to make it work in many different ways.

The first thing I do in thinking of making our food “stretch” is to always think of 2 meals from one protein and/or recipe. For example, I bake a whole chicken once a week and they can be inexpensive. You can also always get a rotisserie chicken (which is a huge time saver) at Wegmans or Costco for $5.00. Depending on the size of your family, you could get at least 2 meals out of one chicken. You can serve the chicken and a veggie and then use the rest for chicken salad or soup.

I always save money AND time when I plan ahead! Even if you sit down and plan out a few days of meals! Plus planning ahead gives you more time to connect with your family!

The recipe I am sharing with you today is for chili. Simple chili is inexpensive to make and can be served more than one time. If you have a larger family, just double the recipe. We planned this out for chili one night and the next night mixing it with fritos and cheese, this is something my husband grew up eating. You could also put the chili on tortilla chips with some cheese for nachos and heat it under the broiler for your next night.

My husband is from Texas and he does not like beans in his chili. We created this recipe with things he likes and it was very simple and quick to make!

Chili Recipe

Ground Beef

½ white onion chopped

2 garlic cloves chopped

8 ounce can tomato sauce

¼ to 1 cup water, if you like thicker chili add 1/4 for thinner add 1 cup

15 ounce can petite diced tomatoes

Bag of chili seasoning (mild)

1 red chili pepper chopped

½ jalapeno pepper chopped

Salt, pepper, southwest seasoning to taste

Brown the beef with the onion in a saucepan. Add the rest of the ingredients and simmer for 30 minutes.
