Dollar Stretching Week / Dessert

Dessert is always a nice end to a meal, so I thought it would be a fun way to end Dollar Stretching Week! Dessert does not need to be elaborate! You can do very simple, inexpensive desserts with what you have in your kitchen already! It can also be a fun way to make memories with the family by making it together and enjoying time with each other! Take your favorite cookie recipe and get the family involved!

One thing I usually have on hand for a quick dessert is instant pudding and cool whip! Throw in a graham cracker crust and you can even make a pie! Mix a small box of instant pudding (any flavor, I always use french or regular vanilla) whisk it for 2 minutes with HALF of the milk called for (Jell-O brand would be 1 cup) then fold in an 8 ounce container of Cool Whip. You can eat as is for pudding, put in a graham crust for pie, or put out some toppings (sprinkles, candies, crushed cookies) and let your guests make parfaits, mmm so yummy!

The recipe I am sharing is one I have been making before children, so over 20 years! You probably have all the ingredients in your kitchen to make it this weekend! Definitely a tried and true recipe!!

Blondie Swirls

1/2 cup unsalted butter

2 cups firmly packed light brown sugar

2 eggs

1 tsp pure vanilla extract

1 1/2 cup flour

2 tsp. baking powder

1 cup chocolate chips

Spray a 13×9 baking pan with cooking spray. Oven to 350.

Melt butter, add in brown sugar. Remove from heat and allow to cool.

Beat eggs and stir into cooled brown sugar and butter, add vanilla. Combine flour and baking powder, add and beat until combined. Stir in 1/4 cup chocolate chips. Spread into prepared pan and sprinkle with remaining chips.

Put pan in the oven for 3 minutes. Remove and very lightly swirl the chips by running a knife through the batter until chocolate looks marbled. Return to oven and bake 30 more minutes. ENJOY!
