It is a bit chilly outside and the perfect day for soup! I am a huge fan of soup! I enjoy making it and eating it! Soup is a great dollar stretcher meal! Usually in my house I can make a pot of soup, eat it for a meal and maybe a lunch, share some with a friend and freeze some. Soup goes a long way! Try some tonight!

Chicken Noodle Soup

Many people have asked for my recipe for this soup. I am sharing the “quick” version of my soup with you today. When making soup, be creative! You can always add and take away based on what your family likes.

3 carrots, peeled and sliced

2 shallots, chopped

1/2 to 1 cup mushrooms. cleaned and sliced

1 TBSP olive oil

4 cups Kitchen Basics Chicken Stock

2 cups water

1 tsp chicken base (I use the brand, Better Than Bouillon) WATCH this ingredient per your taste! It can add a salty taste, if you aren’t big on salt omit it or add half to see how you like it. It DOES add great flavor

1 cup Filini Soup Pasta (Filini is a fine thin noodle) add more if you like a lot of noodles

1 cup cooked shredded chicken, again add more if you like a lot of chicken

Pour olive oil in a sauce pot, add the carrots, shallots and mushrooms and saute about 5 minutes, watching closely as it will burn if you aren’t stirring. Add the stock and water and stir in the chicken base. Bring to a boil then turn down to a simmer and allow to cook for 10 minutes. Then add the noodles and cook for 5 more minutes. ENJOY!

Vegetable Beef Soup

I worked for 9 years in a preschool and loved every moment! We had a cookbook with a Vegetable Soup recipe in it and I used to make it for my kids all the time. I have made it so many times that I changed it slightly to our tastes.

1 pound browned ground beef cooked with 1/2 yellow onion

1 can petite diced tomatoes

1 can sliced potatoes ( canned potatoes hold up much better in soup than fresh potatoes)

1 can italian beans (kids love these, they are flat and fat!)

1 cup sliced carrots

2 cups Kitchen Basics Chicken Stock (if you love beef use the beef Stock instead)

2 cups water

Mix all the ingredients and cook for 30 minutes. Quick, easy, definitely inexpensive to make!

Soup is yummy served with crackers or biscuits. Children love to “dunk” You can make a few grilled cheese sandwiches and cut each sandwich into 4 small squares for mini dunkers or floaters on top of your soup, ooh sooo good!
