Easy Chicken with Rice Pilaf

Hello! What a beautiful Monday! The weather has been perfect today, not too hot or humid and a nice breeze. I am adding this new post sitting on my back porch with Norton!

We eat a lot of chicken in our house! I’m sure I have said this before AND I’m sure I will say it again! I am constantly trying to come up with new ways to cook it and always on the lookout for new chicken recipes. Tonight I decided to take a package of chicken tenders and make it three very simple ways! First I marinated most of the chicken in Ken’s Honey Mustard Dressing for about 2 hours. The other chicken I just added salt and pepper and baked like that. I took half of the marinated chicken and baked with just the marinade. The rest I wrapped a whole piece of bacon around each tender. Bake at 375 for 20 minutes. It was all good but the bacon wrapped chicken was delicious! The bacon gave it very good flavor! Not something I would eat weekly but yummy!

I served it with a simple rice pilaf adapted from a Rachael Ray recipe:

2 TBSP butter

1/3 cup spaghetti, broken into 1 inch pieces

3/4 cup jasmine rice

1 cup chicken broth

1/2 cup water

Melt butter in a medium saucepan, add spaghetti and rice and brown for 3 to 5 mins. Add broth and water and bring to a boil. Cover the pot and reduce heat to simmer and cook for 18 mins. I added dill and Red Robin seasoning to kick up the flavor. ENJOY!
