Today I am sharing a recipe, well truly an idea that’s how simple it is! During all the busy we need ideas/recipes that can be fixed quickly and adaptable to your family’s taste! I hope this does that for you! ENJOY!

Easy Mexican Rice

Brown a pound of ground beef with chopped onion, cook throughly. At this point you can divide it to create individual servings per each family members liking. I took 3/4 out for the mexican rice. Then I added 1/2 bag of cooked, frozen jasmine rice, 1/3 can of petite diced tomatoes, shredded cheese, 1 TBSP canned chopped jalapeno peppers, southwest seasoning. Bake at 350 for 20 minutes. I bake them in mini loaf pans for individual servings. Sprinkle more cheese on top and serve.

I also made Cheeseburger rice. I took the cooked ground beef, added 1/2 bag frozen rice cooked, 1/2 can petite diced tomatoes, water chestnuts for crunch and american cheese. Bake the same as above.

    Looks good! I have a question – do you cook the jasmine rice then freeze it or can you buy already cooked rice in the frozen section in the grocery store?

      Hi Beth! I buy already cooked frozen jasmine rice at Wegman’s. Trader Joe’s also sells it. I have freezing cooked rice on my list to try but haven’t done it yet. Thanks for the question!
