Easy Pizza (No Dough)

PIZZA! Most people love it, most people eat it a lot! I love pizza! I have not had “real” pizza in a while. I’ve tried the Gluten Free Crusts as I’ve shared here on the blog. Although good, I miss my real pizza! I recently saw this pizza on the internet somewhere. They call it “No Carb” pizza. The recipe I first found had an equal number of cups of Mozzarella to eggs, it must make a big crust! I’m also not a huge fan of eggs so I set out to try to create my own version and see if this would take me closer to what I feel is “real pizza”. I have made it several times tweaking my recipe each time. I think I have finally found a delicious way to get close to my “real pizza”. Give it a try and let me know how you like it! ENJOY!

Easy Pizza (NO Dough)

4 cups shredded mozzarella cheese (I mix the cheese up occasionally using mostly mozzarella but adding another as well to make 4 cups)

2 eggs beaten.

Combine ingredients and place on a greased smaller cookie sheet. (I use a 10×14) Bake in a preheated 450 degree oven for 10 to 15 minutes, until golden brown. YUM already!!! This is your crust! Now add your toppings, I love canned mushrooms. I also add a little sauce too. Be creative with your toppings! I am going to try spinach and fresh tomatoes next time! Put back in the oven for 5 to 10 minutes. Oh so Good!!!
