Easy Wednesday Night Dinner

Pausing today to remember everyone touched by 9/11. May we all reflect on where we were, how we felt and how we connected closer with our family, friends and neighbors.

Today I am sharing a quick easy weeknight recipe. This is a recipe from one of my favorite Pampered Chef cookbooks, Casual Cooking, for Sloppy Joes. I have changed it a bit for my family’s needs. Feel free to use ground beef or pork in place of the chicken. I like the way the pita bread taste in place of a bun. Serve it with a salad and you have a quick easy meal, made in no time! Enjoy!

Sloppy Joes

1 pound ground chicken

1/4 cup chopped onion

1 can (8 ounces) tomato sauce

2 tablespoons ketchup

1 tablespoon packed brown sugar

2 teaspoons prepared mustard

4 to 8 pita halves

4 slices American cheese

Brown the ground chicken with the onion until completely cooked through. Add the tomato sauce, ketchup, mustard and brown sugar. Cook until combined. Serve in the pitas with a half a slice of cheese. You can use ground beef instead of the chicken.
