Easy Weeknight Chicken made 2 ways

Today’s recipe is quick and easy, great for those busy weeknights and makes great leftovers! ENJOY!

Weeknight Chicken

1 package boneless, skinless chicken thighs, cut into bite sized pieces

Olive Oil

Taco seasoning

Onion Powder

Dill

Lemon Juice

I used 2 disposable 8 inch square pans to make clean up easy! Divide the chicken between the 2 pans. Coat each pan of chicken with olive oil. One pan generously sprinkle the chicken with Taco seasoning and a little onion powder, toss together. In the other pan, coat the chicken with olive oil, sprinkle with dill and onion powder and squeeze about a half of lemon over top. Toss together. Bake in a 375 degree oven for 20 to 25 minutes, until chicken is done.

Serve with rice or potatoes, use in tortillas or tacos or serve on a salad. ENJOY!
