Freezing Rice

Today I am sharing a very quick and easy idea! I have shared many times how much rice we consume in my house! I usually cook the frozen jasmine rice in a bag from Wegman’s or Trader Joe’s. This week I decided to try my own! It was super simple, I just took 3 cups of jasmine rice, rinsed 2 times, placed in a large sauce pot and added 6 cups of water, you could also use chicken broth for more flavor. I sprinkled in salt, pepper and onion powder. Bring to a boil, place the lid on the pan and reduce heat to low. Cook for 20 minutes or until all the liquid is absorbed and the rice is tender.

To Freeze: let the rice COOL COMPLETELY, then I placed 2 cups in sandwich size freezer bags, double bagged. Then placed all my sandwich bags in a larger freezer bag. In cooking is where you will notice the difference from the store-bought frozen bags. The store-bought is in a bag that will steam your rice, making it “fluffier”. To prepare your homemade version, take the rice out of the freezer, out of the bag and place in a microwave safe bowl. Add 2 TBSP liquid, I used water, place a damp paper towel over the bowl and cook for 4 minutes. Times may vary depending on your microwave. Personally, I enjoy rice so much, I did not notice much of a difference but as I said the store-bought is somewhat fluffier. Give it a try and let me know what you think! ENJOY!

UPDATE on my vegetable prep from earlier in the week….I actually used almost all of the veggies I prepared! The only ones not used yet are the celery sticks which I will have over the weekend and the peas which will be used tonight! I will start doing veggie prep every weekend now, I’m hooked!
