Frozen Peanut Butter Cookies

I am sharing a delicious recipe I recently found on the internet. I’ve adjusted it to my tastes and found that eating them from the freezer, is the best way to enjoy this wonderful cookie! I’ve tried several peanut butter cookie recipes, even have one of my own and they are all very similar. This one is slightly different but what makes it is eating them frozen! A delicious treat especially in the warmer weather! I may serve these for a party I have coming up with ice cream sandwiched in between 2 of them, oh my! Maybe a banana ice cream would be delicious! Give them a try from the freezer! The other plus is, they are Gluten Free, no flour and no dairy! ENJOY!

Frozen Peanut Butter Cookies

Mix until combined:

1 cup smooth peanut butter

1 egg

1/3 cup white sugar

1/4 cup brown sugar

pinch of salt

1 tsp. baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp vanilla

Then add 1/2 cup mini chocolate chips. Scoop onto a parchment lined baking sheet, using a small scoop. Sprinkle each cookie with white sugar and place in the freezer for 15 minutes. Once out of freezer, flatten slightly with a fork. Bake at 350 for 12 to 14 minutes. They will look a tad underdone but will firm up once cooled. Remove from oven and let sit on the baking sheet 2 minutes. Remove to rack to cool. Once COMPLETELY cooled place in airtight freezer bags. Once frozen, ENJOY! Great recipe to make ahead and leave in freezer!
