Gluten Free Maple Cranberry Shortbread Cookies

Today I am sharing a delicious Gluten Free recipe. The original recipe is from King Arthur Flour, I adapted it slightly.

GF Maple Cranberry Shortbread Cookies
1 cup oat flour
3 TBSP. softened unsalted butter
3 TBSP powdered sugar
1 tsp. cinnamon
pinch of salt
2 TBSP cranberry relish (I used Stonewall Kitchen)
2 tsp maple syrup
1/8 tsp maple flavoring
1/2 tsp vanilla
Mix all ingredients in a mixer until thoroughly combined. Roll into a log in parchment paper. Place in the freezer for 20 minutes. Carefully slice the log into small rounds. Place on a parchment lined baking sheet. Bake at 350 degrees for 12 to 14 minutes. Remove from the oven and cool on the baking sheet for 10 minutes. YUM!
