Granola

Today I am sharing one of my favorite, well-loved recipes with you! I have had this recipe for many years. It came from a friend of a friend and she got it from Miserly Moms. Lately I have been making it weekly and giving it as gifts in mason jars. A few weeks ago I came up with a new combination inspired by a granola a friend gave me for Valentine’s Day, from Wegmans, so yummy! This is a recipe meant for creativity! You can add anything to the oats mixture and make your own combinations! Our favorite combination is oats with cinnamon, nutmeg, a pinch of salt and when you remove it from the oven sprinkle with mini chocolate chips then stir, chocolate granola, yum! ENJOY!

Non-Fat Granola

Combine in a saucepan:

3/4 cup brown sugar

1/3 cup concentrated apple juice

1/2 cup dry milk

1/3 cup honey

Heat until sugar dissolves

Mix on a baking sheet:

5 cups oats (I use half quick and half old fashioned, it gives the granola more texture)

cinnamon and nutmeg (I just sprinkle but use what you like)

sprinkle of sea salt

Once combined pour sugar mixture over and combine. USE your hands! You can get bigger pieces this way. Bake at 375 for 20 minutes, keep an eye on it, it can burn if not watched! Once removed from oven sprinkle with mini chocolate chips, I don’t use a lot.

My new favorite combination: I do the 5 cups oats as above with a 1/4 cup unsweetened coconut, 1 tsp fresh ginger, sprinkle of ground ginger and a sprinkle of coconut flakes, keep a very close eye on this in the oven, if you don’t stir frequently the coconut flakes get brown quickly. ENJOY!
