I have discovered a new recipe for whipped cream! I recently saw this recipe being made on 2 separate occasions and had to give it a try! Genius! I am in heaven! I grew up enjoying Cool Whip and can no longer have it. I am also trying to come up with new things for many dietary restrictions for myself and my family members. This covers all basis! It does have fat in it but very little sugar and only 2 ingredients! It is a more natural product than Cool Whip and has less fat, sugar, sodium and cholesterol than even regular whipping cream. The best part is it is supper simple and oh so tasty! Give it a try! ENJOY!

Coconut Milk Whipped Cream

1 can Thai Kitchen Coconut Milk

1 TBSP regular sugar (use more or less per your taste)

OK here is the most important thing you need to know for this to work….place your can of coconut milk in the refrigerator overnight. When I purchase my cans I automatically place in frig so they are ready whenever I need. ALSO, place your mixing bowl and whisk in the freezer for about an hour, make sure your bowl can withstand the freezer. Here is the fun part….carefully remove your can of coconut milk from the frig, NO SHAKING! Open it carefully and spoon out the congealed part of the milk from the top. You DO NOT want the liquid. Place the congealed milk in your mixing bowl and whip until smooth, mine took about 2 minutes and I added the sugar about mid way through. Then eat and enjoy! It is so light tasting and not too sweet! Serve it with fruit or use it as a topping for cupcakes, pies, the possibilities are endless! ENJOY!
