Italian Meatloaf

I created an Italian Meatloaf that I am sharing with you today! Meatloaf is one of those easy recipes that you can make the morning of or the day before and place it in the pan until you are ready to bake it! It is quick to mix together. You could even place the uncooked meatloaf in the freezer to pull out during your busiest holiday week!  I am also re posting my Cooked Homemade Pizza Sauce recipe here since I used it on top of the meatloaf prior to baking. This sauce is great for many recipes not just pizza! I try to always have a jar in my frig and some in my freezer too! ENJOY!

1 pound ground beef

1/2 pound ground pork sausage

1/2 cup shredded mozzarella cheese

2 small rolls torn into pieces and soaked in a little milk (you can use what you have on hand, slices of bread work well too)

1 1/2 tsp oregano

1 tsp black pepper

1 tsp onion powder

1 TBSP olive oil

2 garlic cloves, minced

1 beaten egg.

Mi all the ingredients together. I place in a gallon Ziploc bag and mix that way, less mess. Shape into a loaf and place in a baking pan that has been sprayed with Pam. Pour one cup of pizza sauce on top. Bake at 375 degrees for about 50 minutes. Take out of oven and check with a thermometer. It should read 165 or higher. Add another 1/2 cup shredded mozzarella on top and bake for 10 more minutes! ENJOY!

Cooked Homemade Pizza Sauce

1/4 cup finely chopped sweet onions

splash of olive oil

Saute 5 minutes until translucent. Turn the heat to low/med, add in:

1 minced garlic clove

1/ 15 ounce can tomato sauce

1/4 cup Kitchen Basics Chicken Stock

1 tsp tomato paste

1 1/2 tsp dried oregano

1 tsp onion powder

1 tsp garlic powder

Cook on low for 30 minutes. If you prefer a thinner sauce add more chicken stock. Be prepared for the best smell ever in your kitchen!
