Lemon Spinach Rice Soup

I recently created this recipe based off a picture I saw for a Lemon Spinach Orzo soup at a local restaurant. It looked so yummy and I had to try it! I didn’t have orzo besides I can’t eat orzo so I used rice I had cooked the day before. I adapted this recipe from several I found online for the orzo soup. The result is a fresh, bright taste! I did not think I would care for the lemon in it but it really pulls out the flavors very well! I hope you will give it a try! It is a quick recipe! ENJOY!

Lemon Spinach Rice Soup

olive oil

1/2 onion, chopped

1 tsp. chicken base

garlic powder to taste

season salt to taste

1 cup frozen spinach (use fresh baby spinach if you can, my store hadn’t put it out yet when I went to get it)

1/2 cup cooked rice

2 cups Kitchen Basics chicken stock

2 cups water

juice from 1/2 a lemon

1/2 tsp cornstarch mixed with 1 TBSP cold water

Heat olive oil in a saucepan, add the onions and cook until translucent. Add in the remaining ingredients before the cornstarch. Bring to a boil then add the cornstarch mixed with water. Stir to combine and simmer for 10 minutes. YUM!
