Lighter Apple Bread

Today is all about Apple Bread! I have been making this bread for over 25 years! I believe the original recipe came with a round tall crock that you baked the bread in. I am pretty sure it was made by The Pampered Chef Company. I still have that crock! I used to make this bread for every function! I had not made it in a long time and I knew my family would enjoy it. I adjusted the recipe to make it healthier and I gave it to friends and family to try! Big Hit! I hope you will enjoy it as well. It makes a delicious breakfast or brunch treat! ENJOY!

Lighter Apple Bread
½ cup softened butter
½ cup applesauce
½ cup sugar
1 tsp baking soda dissolved in 1 TBSP lemon juice
2 eggs
2 tsp vanilla
2 cups flour
Pinch of salt
3 medium apples, peeled and chopped
Pre heat the oven to 350 degrees
Cream butter, applesauce and sugar together in a bowl.
Add in baking soda mixture, eggs and vanilla. Beat mixtures together.
Fold apples into butter.
Bake in 2 greased small loaf pans for 40 minutes.
