Lighter Banana Bread

Winter has arrived! As winter weather approaches may you find comfort in your home! Take time for yourself and enjoy some quiet time!

I have been making some version of banana bread since I can remember! I set out to find a healthier version and ended up creating my own! This can be gluten-free as well! It is made in ONE mini loaf pan so one slice is smaller. This isn’t a very sweet bread either. Makes a great breakfast treat! ENJOY!

Lighter Banana Bread

1 cup oat flour

1/2 tsp baking soda

1/2 tsp baking powder

pinch of salt

1 egg

2 over ripe bananas mashed

1/4 cup applesauce

1/4 cup brown sugar

Mix the dry ingredients and set aside. Combine the egg, bananas, applesauce and brown sugar, mixing well. Stir in the dry ingredients. Pour into a mini loaf pan that has been sprayed with Pam. Bake at 350 degrees for 30 to 40 minutes. MMM Good!
