Today I am sharing a recipe I created many years ago. My wonderful Pampered Chef consultant enjoyed it so much she started sharing the recipe in some of her shows! It is very refreshing and a great Spring dessert! It looks pretty in the Pampered Chef trifle bowl!
I served this for our Sunday dinner and it was enjoyed by most of my guests! ENJOY!

Margarita Trifle
Ingredients:
1 box white cake mix – the NO PUDDING in-the-mix kind
10 oz. can frozen margarita mix, thawed
3 egg whites
2 TBSP vegetable oil
4 fresh limes
2 small boxes INSTANT vanilla pudding
2 cups milk
8 ounce container Cool Whip, thawed
Combine the cake mix, margarita mix, egg whites and oil. You can add 1 TBSP of lime zest. Beat for 2 minutes. Pour into a greased 13×9 baking pan. Bake 25 to 30 minutes. Cool completely and cut into cubes.
For the filling: Mix pudding and milk with a whisk. Juice limes to measure ½ cup lime juice. Add to the pudding and mix. Then fold in the cool whip. I save some cool whip for the garnish.
Layering: Make 3 layers in a trifle bowl. I use the Pampered Chef trifle bowl and love it! First spread a small amount of pudding then cake then pudding, continue for 3 layers ending with pudding and a cool whip garnish and 3 lime slices in the middle.
ENJOY!
