Good Monday to you! This week I’ve decided to share our Maryland love of crabs and Old Bay with a week of yummies! Growing up we would spend a lot of the summers at the beach. We loved catching crabs and having crab feasts with our large family! Today I am sharing a recipe for Crab Melts. Any time I cook with crab, I keep the added ingredients to a minimum. I want the fresh, delicious crab taste to shine through! ENJOY!

Maryland Crab Melts makes 2 whole English Muffins
3/4 cup fresh crabmeat
1 tsp. chopped green pepper
1 scallion, chopped
1 tsp. mayo
Old Bay seasoning to your taste
Cheese of your choice
2 whole English Muffins
Saute the green pepper and scallion in butter. Let cool slightly. Add in the rest of the ingredients. Toast the English Muffins. Divide the mixture among the 4 halves of English muffins and top with cheese. Place under the broiler until cheese is melted. Watch carefully as it can burn easily. Enjoy!
