Mexican Quiche

Quiche is a delicious, quick, easy dish to make for a meal! You could make 2 different ones on a Sunday and use during the week. Pre bake one then later in the week, bake the other. Depending on the size of your family, you could get several meals out of them. Great leftovers for lunch as well!

I created this quiche by combining several recipes and using ingredients my family likes. ENJOY!

Mexican Quiche
4 eggs
Spices…onion powder, southwest seasoning, red pepper flakes and taco seasoning
½ cup salsa (I use green hatch Valley salsa from Trader Joe’s)
¼ cup sour cream
¾ cup milk
2 cups Mexican shredded cheese
Beat eggs with spices. Add in salsa, sour cream and milk. Mix until combined. Add in cheese. Pour into a frozen pie shell. Bake at 350 degrees for 45 to 50 minutes or until a knife inserted in the center comes out clean.
