Mini Crumb Topped Apple Pie

Today is Tuesday! I missed posting yesterday due to some computer issues!

This recipe is pretty simple, requires few ingredients, will make your home smell wonderful and is oh so delicious! I hope you will give it a try!

Mini Crumb Topped Apple Pie (makes 4)

Trader Joe’s Pie Crust, thawed (you need one roll for 4 mini pies)

4 apples ( I used Pink Lady), peeled and sliced thinly

1/2 cup sugar

1 tsp cinnamon

1/2 tsp nutmeg ( this will give you a strong nutmeg flavor, if you don’t like nutmeg leave it out, if you want it to be more subtle use half this amount)

Place pie crust in pie pan. For this pie, I like it to look rustic so I don’t bother with a fancy edge but you can make a scalloped edge or use mini cookie cutters to jazz it up! Combine the sugar and spices and toss in your apples. Divide the apples into the 4 pie pans.

Crumb Topping

3/4 cup flour

3/4 cup brown sugar

3/4 cup oats

1 stick unsalted butter

Cut butter into the other ingredients until you have a “crumb” consistency. Place topping on each pie. You will have leftover topping unless you like a lot of topping!

Bake at 375 for 40 minutes. If your crust starts to brown place foil around the edge only for the last half of the time.
