Mississippi Pork

Psalm 27:1 “The Lord is my light and my salvation; whom shall I fear? The Lord is the stronghold of my life; of whom shall I be afraid?”

I am wishing you a week filled with moments of stepping out of your comfort one!

I am revisiting a recipe with you today! I shared this original post with you back in 2014! It is one of my favorites for a gathering or for at home meals. This makes great leftovers for quick lunches or dinners as well! The recipe comes from my dear friend Beth. Her family and friends have loved this for many many years!

I have recently been making pork tenderloin once a week for the last month plus. My husband enjoys it and since he is the only one who eats it, I have been buying a 1 pound pork tenderloin each week. I add it to the slow cooker in the morning and cook it on low until dinner time. He usually gets 2 to 3 meals out of 1 tenderloin. If I am having a busy week, I occasionally just throw in some bottled BBQ sauce. But truly this recipe takes no time to whip up and add to your slow cooker for easy summer cooking! I recently served it with homemade biscuits, you can’t go wrong there!!! ENJOY!

Mississippi Pork

2 1/2 pounds pork tenderloin ( I buy mine at Costco and use one and freeze the other for later)

15 ounce can tomato sauce

1/4 cup vinegar

1/4 cup Worcestershire sauce

1/4 cup brown sugar

onion powder

1/2 tsp chili powder

Mix the sauce ingredients in a bowl with a whisk until combined. Add the pork to the slow cooker and pour the sauce over the top. Cook on low 6-8 hours. YUM! I serve this with small slider rolls and the sauce on the side. ENJOY!
