Today I am sharing a quick, easy chicken recipe. I threw this together last night with what I had in the frig! I made chicken tenders on the George Foreman grill, just a spray of Pam with salt and pepper. While the chicken cooked I prepared the other ingredients. I thinly sliced fresh mozzarella cheese. Then I sautéed spinach, baby bella mushrooms and chopped onion. When the chicken was ready, I quickly placed a slice of mozzarella on top then topped with the vegetables which helped melt the cheese. I served it with roasted rainbow carrots that I sliced lengthwise. So easy, so quick and I used up vegetables I had on hand! Enjoy!
