NEW Cookie creation / Naturally Gluten Free Chocolate Chip Cookies

I recently created a NEW recipe! I was simply trying to make a naturally gluten-free chocolate chip cookie for myself. I truly did not expect my friends and family to try them let alone enjoy them! Well to my surprise, I seem to have created a yummy new cookie! I had 6 NON Gluten Free taste testers and all of them gave me rave reviews! I have already made 2 batches. 2 3/4 cups oat flour (made by blending quick cooking oats in the food processor to make flour)

1/2 tsp baking soda

1/2 tsp baking powder

pinch of salt

3/4 cup unsalted butter, melted

1 cup brown sugar

1/2 cup white sugar

1 TBSP vanilla

1 egg

1 egg yolk

1/2 cup mini chocolate chips

1/2 cup shredded coconut

Blend the flour, baking soda, baking powder and salt, set aside. Combine the butter and sugars in a mixer, blend until smooth. Add in the vanilla, egg and egg yolk, mix well. Then add the flour mixture just until combined. Add in the chocolate chips and coconut. Drop onto parchment lined baking sheets using a small scoop. Place the whole pan in the freezer for 15 minutes. Meanwhile, preheat the oven to 350 degrees. After the 15 minutes place the pan right in the oven from the freezer. Bake 12 to 14 minutes, until just starting to look golden brown but no longer wet looking. Remove the pan from the oven and allow the cookies to sit on the pan for 1 minutes. Remove to cooling rack.
